Every run on a still is an experiment. Copper, heat and vapor do the chemistry. You decide how fast, how hot and where to make your cuts. The problem with a propane burner is that a flame is hard to hold steady, and you end up hauling tanks around while you try. An electric still replaces the burner with a heating element and a controller. You plug it in, set your heat and change it in small steps you can repeat. That's the idea behind Electric Stills.

Our stills are handmade from American copper by a family shop in New Hampshire. Each complete unit comes with an electric element and controller, so your bench works more like a lab and less like a campfire.

Pick your power: 110V or 220V

• 110V: The 6 Gallon Advanced Model runs on a 110V element with controller, starting at $999. One version adds the EZ Seal Cap and a 4 inch thumper port.
• 220V: The 10, 15, 20 and 25 Gallon Advanced Models run on 220V elements with controllers. The 20 gallon includes the EZ Seal Cap and a 4 inch thumper port.

Before you choose, check what kind of outlet you have where you plan to work. If you're not sure the circuit is right, ask a qualified electrician. Pick the voltage that matches the power you actually have.

Why electric heat makes for better experiments

Good distilling comes down to control. With a flame, you nudge a valve and watch the thermometer. With a controller, you turn the heat up or down, and next time you can go straight back to the same setting. Being able to repeat a setting is how one good run becomes a method you can count on. Curious what a slower warm-up does to your early output? Change one thing, take notes and compare. That's the scientist's side of the craft. The alchemist's side is the copper, which handles the vapor from the moment it rises until it condenses.

Going electric also means no tank to refill and no open burner flame under the pot. You still need to respect heat, steam and electricity, and keep good airflow in your workspace.

The legal part, in plain words

In the US it's legal to own a still. Making alcohol with one is a different matter: you need federal TTB permits, and that includes fuel alcohol. Many owners use their stills to distill water or essential oils. Whatever you run, follow federal, state and local law.
